I changed my LeGrand a few years ago from an old ZX10 (with hydraulic clutch) to a GSX-R 1000 K5/6 (with cable clutch). That wasn't too bad, since it was part of a frame-up restauration and a friend of mine did the work.
I am now in the process of changing another car from a Honda engine (with hydraulic clutch) to another K5/6. The installation of a clutch cable looks like a major hassle, which is why I checked into a conversion to a hydraulic clutch. Everything is there already, the master cylinder and the hose. I am just missing the slave cyclinder.

However, I don't want to spend the $800, especially since this is supposed to be an "inexpensive" car. I came across information that the K7 engine was equipped with a hydraulic clutch with a slave cylinder in the sprocket cover that bolts right to the K5/6 engine. I guess I'll be looking for one of those covers.
I heard some negative comments about hydraulic clutches. People say a cable clutch has more feel. I am not sure why. Both, the cable and the hydraulic fluid, only transmit a force and act against the clutch springs. The only difference I can see is that with the cable clutch, the both ends of the cable hook to rotating levers, and the force acting on it can change as a function of angle. However, that seems negligible to me. I drove both of my cars with hydraulic clutches for a little while, and I did not have any issues. I hope the conversion will be easy, and we'll see how the two compare.
